Buffalo Chicken Salad

What you will need:

  • 6oz chicken breast
  • 1 Tbso Extra Virgin Olive Oil
  • 2 tsp Franks Buffalo sauce
  • 3 cups salad mix
  • 1/4 cup shredded cheese
  • 4 Tbsp of Lite Ranch dressing

Season the chicken with salt and pepper and cook on stove top in a Tbsp of Extra Virgin Olive Oil. Once chicken cooks for 5-6 min turn over to cook other side.  Once juices are clear chicken will be down.  Once chicken is fully cooked set on a plate to rest for 5 min. This will allow the juices to set in the meat and be moist for the salad.

Place the salad mix on a plate topped with 1/4 cup shredded cheese of your choice.  Feel free to top with any other veggies you like.

Once the chicken has set for 5 min go ahead slice the chicken.  Place in a small bowl and add the Franks Buffalo sauce and toss.  Once all chicken is coated with sauce add to salad.  Finish salad with the Lite Ranch dressing and enjoy!
