What you’ll need:
- 10 large eggs
- 1/2 cup shredded cheese, any flavor
- 1 Tbsp half and half
- 1/2 tsp onion powder
- salt/pepper to taste
- veggies of your choice, mine had jalapenos in them but choose what you would put into an omelet
In large bowl, whisk eggs and cheese, half/half, onion powder, salt, pepper and veggies. Mix until everything is incorporated.
Spray muffin tin with anti-stick spray and spoon into muffin tin.
Back for 20-22 min at 350 and store in container with paper towel to pick up moisture.
