Happy Tasty Tuesday Everyone!! I love to share recipes that I have created and that my family enjoys in hopes that your family will love them just as much 🙂 One of my favorite all time dishes are ‘one pot’ dishes…meaning you only need one pot to cook everything in. Don’t get me wrong I love to cook however I hate the clean up and if I can spend my time doing something else then I’ll take advantage of that!
This quick, healthy and delicious lunch or dinner is a breeze to cook and takes no time to clean up afterwards. I also take short cuts when I can since I’m a busy mom of 3 boys and we are always on the go. You will see that I did use Tyson ready grilled chicken strips however you can definitley use fresh chicken breast or tenders. I would suggest baking them prior to cooking in another skillet on top of stove while cooke veggies. If you have a large family you many want to make this over the weekend or on your day off which will allow you to eat and go especially on those busy nights.

What you will need:
1 tbsp, Coconut Oil
3/4 cup carrots, chopped
1/2 cup green bell pepper, chopped
1 cup baby portabella sliced mushrooms
6 ounce grilled/baked chicken, strips or diced (I used Tyson’s ready strips)
1 Cup Steam Fresh broccoli florets
1 tbsp Kikoman soy sauce, reduced sodium
Brown rice or couscous (optional)
1. In a medium skillet over medium heat melt the coconut oil
2. When coconut oil is hot add the carrots, bell pepper and mushrooms. Cover and cook until tender…about 3-5 minutes
3. Add chicken strips to veggie mixture and cook 5-6 minutes. While your chicken is heating up, place the Steam Fresh broccoli in the microwave and cook according to instructions
4. When chicken and broccoli are done cooking, add the broccoli to the skillet. Add the soy sauce and allow this to cook for 3-5 minutes. This will allow all of the flavors to combine.
Serve as is or serve over a bed of brown rice or couscous.
